Ingredients

For the Pie Crust

  • 1 ¼ cup all-purpose flour
  • ½ tsp. salt
  • ½ cup unsalted butter cut into small cubes
  • 3-4 tbsp ice water

For the Filling:

  • 6 slices bacon chopped
  • 1 small onion finely chopped
  • 1 cup Gruyere or Swiss Cheese shredded
  • 4 large eggs
  • 1 cup heavy cream
  • ½ cup whole milk
  • salt and pepper to taste
  • pinch of nutmeg optional

Instructions

Pie Crust:

  • Preheat oven at 375 °F degrees.
  • In a large bowl, whisk together the flour and salt. Add the cold butter cubes and use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
  • Gradually add the ice water, 1 tablespoon at a time, and mix until the dough starts to come together. Form the dough into a ball, flatten it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Roll out the Pie Crust:
Roll out the chilled dough into a circle about 12 inches in diameter on a lightly floured surface. Carefully transfer the dough to a 9-inch pie dish. Press the dough into the bottom and sides of the dish, trim any excess dough, and crimp the edges. Place the pie dish in the refrigerator while you prepare the filling.
  • Cook the Bacon and Onion:
In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and drain on paper towels. In the same skillet with the bacon drippings, sauté the chopped onion until softened and lightly browned. Remove from heat and set aside.
  • Assemble the Quiche:
Spread the cooked bacon and sautéed onion evenly over the bottom of the chilled pie crust. Sprinkle the shredded cheese over the bacon and onion.
  • Make the Custard Filling:
Whisk together the eggs, heavy cream, and milk in a mixing bowl until well combined. Season with salt, pepper, and a pinch of nutmeg if desired.
  • Bake the Quiche:
Carefully pour the custard mixture over the bacon, onion, and cheese in the pie crust.
  • Place the quiche in the preheated oven and bake for 35-40 minutes, or until the filling is set and the crust is golden brown.
  • Allow the Quiche Lorraine to cool for a few minutes before slicing. Serve warm or at room temperature as a delightful brunch, lunch, or dinner dish. Enjoy!
