Ingredients
  

  • 4 ripe peaches sliced
  • 1 sheet puff pastry thawed
  • 2 tbsp butter
  • 3 tbsp St. Dalfour Heritage Peach Jam
  • 1 tsp ground cinnamon
  • 1-2 tbsp sugar optional, for added sweetness
  • 1 egg for egg wash
  • Flour for dusting

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the puff pastry: On a lightly floured surface, roll out the puff pastry sheet into a rough circle or rectangle (about 12 inches wide). Transfer it onto the prepared baking sheet.
  • Sauté the peaches: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced peaches and sauté for 3-5 minutes until they start to soften. Stir in the St. Dalfour Heritage Peach Jam and sprinkle with cinnamon. Cook for another 2-3 minutes, letting the peaches caramelize slightly. Taste and add sugar if needed for extra sweetness.
  • Layer the pastry: Spread the sautéed peach mixture evenly over the center of the puff pastry, leaving about a 2-inch border around the edges.
  • Fold the edges: Gently fold the edges of the puff pastry over the outer edges of the peaches, creating a rustic border around the fruit.
  • Egg wash: In a small bowl, beat the egg and lightly brush the folded edges of the puff pastry to give it a golden finish during baking.
  • Bake: Place the galette in the oven and bake for 25-30 minutes, or until the pastry is golden brown and crisp.
  • Serve: Let the galette cool for about 10 minutes before slicing. Serve warm, optionally with a scoop of vanilla ice cream or whipped cream.
